Cilantro Vinaigrette


Cilantro makes a wonderful dressing on a salad of soft lettuces and avocado. Adapted from A Pinch of Yum. Perfect for Grilled Baja Adobo Chicken.
Ingredients
2 cups packed fresh cilantro (tenders stems can be included)
1/2 cup olive oil
2 tablespoons white vinegar
1 clove garlic
1/2 teaspoon kosher salt
1/2 teaspoon red pepper flakes
1/8 teaspoon honey (optional)
Steps
1 Blend all ingredients except honey for 1 to 2 minutes until smooth. Add a bit of water if it seems too thick.

2 Taste and adjust seasoning if necessary. If it seems a bit tart, add honey and blend again.
