Michele's Original Balsamic Vinaigrette

To accompany her California Salad, Michele Em, Joanna's astral twin and
great cook, makes this lovely dressing. Vegetables for the salad are stirred in before serving. |

Ingredients |
|
1/2 cup olive oil
1 large clove smashed garlic, left whole
1/8 teaspoon of dried oregano, crumbled
4 teaspoons balsamic vinegar
1/2 teaspoon Dijon mustard
1 teaspoon freshly ground black pepper
pinch of salt
1/2 cup diced tomato
6 green onions, white ends only, thinly sliced
5 radishes, thinly sliced, halved if large

Steps

1 | Microwave glass bowl with olive oil with garlic and oregano for 90 seconds, or heat gently on stove. The oil should get warm enough to bring out the aromas of the garlic and herbs, without getting hot enough to change the flavor of the oil or burn the garlic. |
| 2 | Whisk in balsamic vinegar, mustard, fresh ground black pepper and pinch of salt. Let stand for 10 to 15 minutes. |
| 3 | Mix in chopped tomato, green onion, and radish. Remove garlic. |
| 4 | Can be served warm or at room temperature. |

If you run out of time to make this dressing, Newman's Own Balsamic Vinaigrette is a reasonable substitute.
