Quick Huevos Rancheros

Our standard recipe for Huevos Rancheros is delicious and wonderful and not all that time consuming. However, sometimes I have a craving for the flavors and just want to make the dish quickly. I can have this done in the time it takes my husband to take a shower.

Ingredients |
|
2 slices thick-cut bacon, sliced crosswise into 1/2 inch pieces
1 can (10 ounces) diced tomatoes with green chiles (such as Rotel brand)
1/4 cup water
1 tablespoon vegetable oil
4 corn tortillas
1 tablespoon butter
4 eggs
Cilantro for garnish (optional)

Steps

1 | In a heavy skillet, cook bacon until just beginning to brown. Add tomatoes and their juice along with the water. Allow to simmer. |
| 2 | Meanwhile, in another skillet, preferably non-stick, heat vegetable oil. Gently cook tortillas, heating for about 30 seconds per side. You don't want them crispy, but you want to bring out a toasty flavor. Remove to paper towel lined plate and dry slightly. Place 2 tortillas on each serving plate. |
| 3 | Melt butter in the same skillet used for tortillas. Cook eggs in butter, over easy or sunny side up. A runny yolk will taste better. |
| 4 | Garnish with cilantro if desired and serve. |
