Buffalo Chicken Wings

Ingredients |
|
1 1/2 pounds chicken wings
1/3 cup all purpose flour
1/2 teaspoon salt
1/2 teaspoon freshly ground pepper
Vegetable oil (3/4 inch depth in heavy skillet)
3 tablespoons unsalted butter
1 tablespoon white wine vinegar
1 teaspoon hot red pepper sauce (modify to taste)

Steps

1 | Remove wing tips. |
| 2 | Mix flour, salt and pepper in shallow bowl. Coat wings with flour mixture and shake off excess. |
| 3 | Heat oil in heavy skillet and add as many wings as will fit in a single layer. Fry about 9 minutes or until golden brown. Drain on paper towels. Place on ovenproof dish and keep warm in oven. |
| 4 | Heat butter in small saucepan until foaming. Remove from heat, stir in vinegar and pepper sauce. |
| 5 | Transfer wings to large bowl. Pour butter sauce over wings and toss until evenly coated. |
