Sweet Crepes

Ingredients

3/4 cup flour
1 1/2 teaspoon sugar
1/4 teaspoon baking powder
1/4 teaspoon salt
1 cup milk
1 egg
1 tablespoon vegetable oil
1/4 teaspoon vanilla


1 In large mixing bowl, measure and mix together the four, sugar, baking powder, and salt.
2 Measure and mix together in a smaller bowl, the milk, egg, oil and vanilla.
3 Stir liquid ingredients into dry and beat until smooth.
4 Pour small amount of batter into hot, lightly greased crepe pan. Tilt pan so batter just coats bottom.
5 Cook at medium high temperature until done. Top side will be pale.
6 Stack cooled, cooked crepes between layers of wax paper.
7 Refrigerate or freeze the stacks in plastic bags until ready to use.
