Cowboy Caviar Dip

This fresh-tasting dip will disappear before all others. It's a snap to throw together and can be made ahead of time, but the avocados shouldn't be added until just before serving. |

Ingredients |
|
2 tablespoons red wine vinegar
1 1/2 teaspoons hot sauce
1 1/2 teaspoon vegetable oil
2 cloves garlic, minced
1/8 teaspoon pepper
1 can black beans
1 can of corn kernels
2/3 cup green onion
2/3 cup fresh cilantro
1/2 pound Roma tomatoes, diced
salt
1 firm avocado
Tortilla Chips

Steps

1 | Mix all ingredients except avocados. Let sit for 1/2 hour to allow flavors to meld. |
| 2 | Gently toss in avocados. |
| 3 | Serve with tortilla chips. |
