Vanilla-Peach Marmalade

Ingredients |
|
2 1/2 pounds peaches
4 cups sugar
juice of 2 lemons
4 tablespoons cognac
2 vanilla pods, cut into 3” lengths

Steps
|

|
1 | Peel and slice peaches. |
| 2 | Cover sliced peaches with sugar and juice. Let stand 2 to 3 hours. |
| 3 | Bring peach mixture to boil, then reduce and simmer 20 minutes, until soft. |
| 4 | Return to boil for 20 to 25 minutes, until jelling point is reached. |
| 5 | Remove from heat, skim off foam, let cool for 10 minutes, then stir in cognac. |
| 6 | Ladle into jars and put vanilla piece into each. Ready in 1 month.
Yields 4 half-pint jars. |
