Carrot Crepes

Ingredients
4 medium carrots
2 tablespoons flour
1 tablespoon cornstarch
1/2 teaspoon salt
1/2 teaspoon freshly ground pepper
2 eggs
dash of sugar +
1/4 cup of milk
1 tablespoon olive oil
 
Steps
1 Puree all ingredients except oil in food processor.

2 Heat saute pan and add olive oil.

3 Pour carrot mixture into heated oil and sauté lightly.

Notes Optional add-in:
Chopped green scallions.
