Game Hens with Fresh Herbs

So simple, yet so tasty. This is sure to become a spring and summer favorite, when fresh herbs are plentiful.
Yield 4 servings
Ingredients

2 game Hens
1/3 cup chopped mixed herbs (sage, rosemary, basil, thyme)
3 tablespoons Extra Virgin Olive Oil
1 teaspoon Dijon mustard
1 clove garlic, minced
Salt and freshly ground black pepper +


1 Preheat oven to 350º F.
2 Combine herbs, mustard, garlic and oil. Slather on hens. Season with a bit of salt and a generous amount of pepper.
3 Bake 1 hour, until golden brown.
