Hard-Boiled Egg Vinaigrette

French

Dress up the simplest greens with this classic salad dressing.
Ingredients
1/2 teaspoon Dijon mustard
3 tablespoons white wine vinegar
1/3 cup extra virgin olive oil
2 teaspoons minced fresh parsley
1 hard-boiled egg, chopped fine
Salt and pepper to taste +
 
Steps
1 In a small bowl whisk together the mustard and vinegar. Add the oil, whisking, until the vinaigrette is emulsified.

2 Stir in the parsley and egg.

3 Add salt and pepper to taste.

Notes Makes about 2/3 cup.
