Old-Fashioned Vanilla Pudding
This can be thinned a bit with milk to become a delicious sauce, very much like a Creme Anglaise. For Pareve version, replace milk with soymilk and replace butter with margarine.
Yield 4 servings
Ingredients
1/3 cup sugar
1/4 cup cornstarch
Pinch of salt
2 3/4 cups milk (can use soymilk)
2 tablespoons butter (can use margarine)
1/2 teaspoon vanilla
1 | In medium saucepan combine sugar, cornstarch and salt. Gradually stir in milk until smooth. |

2 | Bring to a boil over medium heat and boil 1 minute, stirring constantly. Remove from heat. Stir in butter and vanilla. |

3 | Pour into serving bowls. Cover; refrigerate. |

1 | In medium glass bowl, gently whisk together sugar, cornstarch, salt and milk. |

2 | Microwave on high for 2 minutes. Remove from microwave and whisk until smooth. |

3 | Microwave on high for 1-minute intervals, whisking between each interval until pudding begins to thicken. |

4 | Whisk in butter and vanilla. |
|
5 | Pour into serving bowls. Cover, refrigerate. |
