Argentinian Pasta goes great with Malbec and Epitfios

If you begin watching the HBO miniseries Epitafios, you notice all the cooking done by Renzo's dad. Thanks to the web we rediscovered this great dish - Pasta in a Scarparo sauce. And true to the film, it is enhanced beautifully with a Malbec.
Ingredients
12 ounces broad pasta, such as pappardelle or tagliatelle
1 tablespoon olive oil
4 ounces pancetta
3 green onions, thinly sliced
1 tablespoon butter
1 tablespoon flour
1 1/4 cups milk (warmed)
1 1/4 cups cream
5 tablespoons tomato puree
Salt, to taste
 
Steps
1 Prepare pasta according to package directions until just al dente.

2 In a large skillet over medium high heat, saute pancetta in olive oil. Cook for 4-5 minutes, then toss with green onions. Cook for 1 minutes, then remove from pan and set aside.

3 Melt butter in skillet. Whisk in flour, then slowly whisk in warmed milk.

4 Whisk in tomato puree and cream and reduce slightly.

5 Add onion and pancetta to cream sauce. Salt to taste.

6 Toss with pasta and serve with freshly grated parmesan, if desired.
