Eggs Buji
Indian Aromatic, tangy, spicy and tasty egg dish

The Indian engineers I worked with recommended this. The recipe is a bit of an appoximation. |

Ingredients |
|
4 eggs
1 tablespoon milk
2 tablespoons vegetable oil
1 medium onion, chopped
2 large cloves of garlic,crushed
3 green chiles, minced
3 tomatoes, diced
1/2 teaspoon turmeric powder
1/2 teaspoon chicken masala powder
Salt and freshly ground black pepper, to taste +
2 tablespoons coriander leaves, chopped

Steps

1 | Beat eggs well with milk and set aside. |
| 2 | In a large skillet over medium high heat. add oil. When hot, add the onions, garlic and chiles. Saute until the onion is transparent and tender. |
| 3 | Add tomatoes and turmeric. Saute 3 minutes longer. Add the masala and stir. |
| 4 | Add the eggs and mix well, cooking until the eggs are set. Add salt and pepper to taste. |
| 5 | Garnish with the chopped coriander. |
