Sauteed Spinach with Balsamic and Roasted Peppers

Ingredients |
|
1 tablespoon olive oil
1 tablespoon butter
2 tablespoons chopped red onion
2 roasted red peppers, thinly sliced
2 large cloves garlic, cut into thin slivers
1 pound baby spinach leaves
1 teaspoon balsamic vinegar
2 tablespoons grated pecorino Romano cheese
Salt and freshly ground black pepper to taste

Steps

1 | In large skillet over medium high heat, combine oil and butter. Add onions and sauté 2 minutes. |
| 2 | Add red pepper, garlic and spinach and saute until spinach is barely wilted. |
| 3 | Add balsamic and sauté for 2 minutes. |
| 4 | Season to taste with salt and pepper. Top with Romano cheese and serve. |
