American

A finely textured, delicious bread for sandwiches, toasting or just eating with a thin skim of butter. We tested at least a dozen recipes prior to declaring this the winner. You can substitute other nuts or seeds for the pecans, or wheat germ instead of flax seed. |

Notes
You can make your own high-gluten flour: for every cup of regular flour, remove 1 tablespoon flour and replace with 1 tablespoon wheat gluten (available in most natural foods stores and some specialty stores).
