High Altitude Waffles

Augmenting the Kodiak Cakes recipe for our mile high altitude in Boulder County, Colorado. We use an automatic waffle iron we found at a garage sale.
Yield 4 waffles

Ingredients

1 1/2 cup Kodiak Cakes Mix
1 1/8 cup water
1 1/2 tablespoon oil
1 egg

1 Mix all ingredients together.

2 Heat waffle iron and coat surface with about 1 tablespoon oil.

3 Cook to light golden brown, or according to manufacturer's instructions.

notes Serve Waffles with: Butter & Syrup, Chopped Pear & Pecans, Strawberries and Whipped Cream, Chocolate & Orange, Bacon
