Potatoes Lyonnaise

This is an essential potato styling with potatoes cut into cubes with parsley and fried. |

|
Ingredients |
|
2 cups boiled potatoes, slightly underdone, diced into 3/4" cubes
1/8 teaspoon salt, to taste
1/8 teaspoon pepper, to taste
1 teaspoon minced onion
2 tablespoons fat
1 tablespoon chopped parsley
1/2 teaspoon vinegar (optional)

Steps

|
1 | Season potatoes with salt and pepper. |
| 2 | Sauté the onion in fat until lightly browned. Add potatoes and stir with a fork until all sides are brown. Cook long on reduced heat to keep onions moist. |
| 3 | On lowest heat, sprinkle with parsley cook one minutes. |
| 4 | Optional finish. Toss well with vinegar. |
| 5 | Let rest in dish a few minutes. |
