Stir-Fried Broccoli with Ginger and Garlic

The broccoli takes on a nice roasted flavor when stir-fried. |

Ingredients |
|
Peanut or coconut oil
1 pound broccoli, cut into florets
2 large cloves garlic, minced
2 tablespoons thinly julienned ginger
1/2 cup chicken or vegetable stock
4 teaspoons soy sauce
4 teaspoons toasted sesame oil
4 teaspoons sesame seeds

Steps

1 | Heat 1 tablespoon oil in a wok or skillet over medium-high heat. Add broccoli, toss to coat with oil, then stir-fry for a minute or two. Allow the broccoli to get a few brown spots for that toasty, stir-fried flavor. |
| 2 | Push the broccoli aside and add a bit more oil to the bottom of the pan. Stir garlic and ginger into this oil, and sauté for 30 seconds or so, until fragrant. Toss with the broccoli. |
| 3 | Quickly add stock, soy sauce, and sesame oil to pan and stir into broccoli. Keep heat high enough to cook and reduce the sauce quickly, but do not overcook the broccoli. It should be fork-tender, but still have some bite to it. Push it to the sides of the pan if necessary to reduce sauce. |
| 4 | Add half of the sesame seeds and toss. Remove to serving dish, then sprinkle remaining seeds over top. |
