Chimichurri is a pesto-like, thick Argentinian herb sauce that is typically served with roasted meats and fish. The bright flavors of the sauce are quite seductive, and you may find yourself dabbing a bit on everything on your plate. Chimichurri sauce goes well with a Grilled Turkey Breast or a steak. |

Ingredients |

1 garlic clove
3/4 cup fresh cilantro leaves
3/4 cup fresh flat-leaf parsley
1/4 teaspoon cayenne or crushed hot red pepper
2 tablespoons distilled white vinegar
1/4 cup olive oil
1/4 teaspoon salt

1 | In a food processor or blender, put all ingredients, then blend until herbs are almost smooth. Alternatively, if using a chef's knife, finely mince garlic, cilantro, parsley, and red pepper; whisk into vinegar, oil, and salt. |
