20 authentic French Shallots
2 ounces butter
1 tablespoon sugar
freshly ground pepper and fleur de sel, to taste

Peel the shallots.

Melt the butter in heavy bottomed-pan. Add the whole shallots. Sprinkle with sugar. Season to taste with pepper.

Barely cover with water and cook over high heat until the water has completely evaporated, stirring from time to time with a wooden spoon. Top with fleur de sel and serve as a garnish for roast or grilled meat.
