Buttermilk Waffles with Orange-Butter Sauce
The sauce is so easy and so yummy, no additional butter or syrup is needed. You can top with chopped pecans for a nice variation.

Ingredients
1 1/2 cups unbleached flour
1/2 cup whole-wheat flour
2 tablespoons light brown sugar, packed
1 teaspoon baking soda
1/2 teaspoon cinnamon
1/4 teaspoon salt
2 cups buttermilk
2 eggs, separated
1/3 cup unsalted butter, melted and cooled
1/2 teaspoon vanilla
Orange Butter Sauce
3/4 cup brown sugar
1/4 cup butter
1/2 cup orange juice
1 | Combine ingredients for orange-butter sauce in small saucepan. Heat slowly, stirring often, until smooth, about 3 minutes. Can be made in microwave. |

2 | Preheat waffle iron and grease lightly. |

3 | In a large mixing bowl, whisk together the flours, brown sugar, baking soda, cinnamon, and salt. In another bowl, whisk together the buttermilk, egg yolks, butter and vanilla. |

4 | Beat the egg whites until stiff. Stir the buttermilk mixture into the dry mixture quickly until blended, then gently fold in egg whites. |

5 | Cook waffles until golden brown. Pass warmed sauce at the table. |
