Honey-Lime Vinaigrette

A light, refreshing salad dressing that is an especially good accompaniment to Latin meals.
Yield 1 cup
Ingredients

1/4 cup fresh lime juice
1 tablespoon white vinegar
1/2 teaspoon Dijon mustard
3/4 cups olive oil
1 teaspoon honey
Salt and freshly ground pepper, to taste


1 Whisk together lime juice, vinegar, mustard, and honey.
2 Whisk in olive oil until emulsified. Season with salt and pepper to taste.
