Ingredients |

1 pound chow mein noodles
2 tablespoons Mama Janisse's Chili Pepper Paste
1 tablespoon sesame oil
1/4 cup soy sauce
1 tablespoon ginger, minced or grated
2 tablespoons mirin wine
2 teaspoons peanut or vegetable oil for frying
Optional – Snow peas, chopped bok choy, sliced scallions or vegetable of your choice.

Steps

1 | Cook noodles according to package directions. Drain well. |
| 2 | Make noodle sauce: Mix chili paste, sesame oil, soy sauce, ginger and mirin. Set aside. |
| 3 | Heat peanut oil in wok. If using vegetables, cook these first then remove from pan. |
| 4 | Add noodles to wok and stir fry, adding a little oil if necessary. |
| 5 | When edges of noodles begin to brown, add sauce and toss. |
| 6 | Toss with optional vegetables and serve. |
