Banana Streusel Muffins

These high-domed, yummy muffins are made even healthier with an addition of wheat germ or raisins. |

Ingredients |
|
2 bananas
2 1/2 cups flour
1 teaspoon baking soda
2 teaspoons baking powder
1/2 teaspoon cinnamon
Pinch of salt +
1 1/4 cup brown sugar, packed
2/3 cup vegetable oil
1 tablespoon orange zest
1 egg
1 cup yogurt, sour cream or buttermilk
2 teaspoons vanilla
1/2 cup Streusel Topping
Add-In Options: +
1/4 cup wheat germ
1/2 cup raisins
1/2 chopped walnuts

Steps

1 | Preheat oven to 400°F. Spray tops of muffin pan with cooking spray and insert paper liners, if using. |
| 2 | In a small bowl, roughly mash bananas. |
| 3 | In a large bowl, whisk together flour, soda, salt, baking powder and cinnamon. |
| 4 | In a medium bowl, whisk together brown sugar, oil, zest, egg, yogurt, and vanilla. |
| 5 | Add wet ingredients to dry ingredients, whisking until blended. Add bananas and any other optional ingredients and stir to blend. |
| 6 | Fill muffin cups with batter. Top each muffin with 1 tablespoon Streusel Topping. |
| 7 | Bake at 400°F for 15 minutes, then reduce temperature to 350°. Bake for another 10 to 12 minutes, until muffins spring back when touched. Let cool in pan for 5 minutes, then remove to serving platter. |
