Thyme Roasted Prawns on a Bed of Sea Salt
This recipe of cooking on a bed of salt comes from Brittany, where some of the world's most refined sea salt is produced. A pan that can go from oven to table is ideal for a unique presentation.

Ingredients
2 pounds large prawns, in their shells
4 tablespoons olive oil
2 teaspoons thyme leaves
4 tablespoons coarse sea salt
1 | Combine olive oil, thyme, and prawns in a bowl, turning to coat. Cover and refrigerate for 2 to 4 hours. |

2 | Preheat broiler and place rack 4 inches from heat source. Sprinkle salt over a baking sheet and place prawns on salt. |

3 | Broil prawns for 2 minutes. Turn and broil for 2 minutes more. |

4 | Serve broiled prawns on a flat dish or direct on pan. Peel and eat. |
