Ground Bison Tacos
Mexican Feast for many

This is a festive dish for parties, and everyone can make their own. You can serve in a crispy taco shell or a soft corn tortilla.

Ingredients |
|
1 tablespoon olive oil
1 pound ground bison
1 teaspoon ground cumin
1 teaspoon smoked paprika
1/2 teaspoon dried oregano
1/2 teaspoon garlic powder
1/2 teaspoon chili powder
1/2 teaspoon salt
1/2 teaspoon freshly cracked pepper
8 (or more) warm corn tortillas or crispy taco shells
Pico de Gallo topping:
2 cups chopped fresh tomatoes, preferably roma or cherry
1/2 cup diced onion
1/4 cup chopped cilantro
1/2 lime, juiced
pinch of salt and pepper +
Accompaniments:
Shredded jack or cheddar cheese
Chopped avocado or guacamole
Salsa
Chopped lettuce
Diced chile pepper

Steps

1 | Heat oil in a skillet over medium heat. Add the ground bison, breaking it apart as it cooks. When it begins to brown, add the spices, stir and continue to cook until browned. |
| 2 | While bison is cooking, toss the pico de gallo ingredients together and set aside. |
| 3 | Place cooked bison on tortillas then top with a bit of pico de gallo, then follow with accompaniments of choice. Or, do as we do - set everything in bowls on the table and let diners make their own tacos. |
