On the outskirts of Austin Texas, my artist friend Robert Tiemann suggested this dish.
Ingredients
2 pork breakfast sausages, chopped
1/4 medium onion, sliced
1/2 jalapeño pepper, diced
4 eggs, lightly beaten
2 tablespoons salsa
2 tablespoons grated cheddar cheese (optional)
 
Steps
1 In non-stick skillet, fry sausages and onion until onion is soft.

2 Add jalapeño and cook for 2 minutes longer.

3 Add eggs and cook until set.

4 Add salsa and cheese (if using).
