Anita's Chocolate Coconut Mountains

American

In her bakery Original Sin, Anita Lynn made what she called coconut chocolate dreams. Here is the crowd pleaser.
Ingredients
3 cups coconut shredded
1/2 cup melted butter
1 teaspoon vanilla
2 cups confectioners sugar sifted
4 oz semi-sweet chocolate
1/8 teaspoon salt
 
Steps
1 Melt butter and remove from heat.

2 Add vanilla, salt, coconut, and sugar.

3 Scoop a scant tablespoon and form into a tight ball form peak on top.

4 Refrigerate for 30 minutes on wax paper on foil.

5 Dip into melted semi-sweet chocolate.
